Man did you ever miss out. Well, you missed out on the 2001 Chimay Blue Mark broke out today by the pool. Holy crap was that a smooth beer. Being 5 years old, some of the flavors mellowed out a bit, but it was like drinking silk. I think the only other thing I have had that was as smooth and easy to drink was Honeymans Blueberry Mead. Woof! ;D
I also got to taste a room temp Dogfish 120. I usuakky have them about 50-60 degrees, but we sat 1 outside for about an hour then drank it luke warm. Talk about night and day, so many more flavors and levels of maltiness I missed before. The warmer that beer is, the smoother and mellower it is.
p.s. I hope John Mc remembered your yeast, I gave it to him.

I agree, I have never tasted anything so smoooooth................ Mark, you really should take a 6-pack of your Chimey-clone and label the tops 2007, 2008, 2009, 2010, 2011, 2012 & 2013 Then open up one bottle each year and see how it ages. The key is to make sure you have enough other good homebrew to drink so you leave them alone.
