OLD ALE EST OA Recipe 70.11% 28.0 lbs Maris Oter Malt 14.94% 6.0 lbs American 2-Row 4.60% 1.8 lbs British Caramalt 3.45% 1.4 lbs German Munich 3.45% 1.4 lbs British Chrystal 55 3.45% 1.4 lbs German Red Wheat 100.00% 40.0 lbs 3 systems with 29 lbs each, mash in at 150F for about 1 hr Stepped thru 3 systems to 158, one with rest Stepped to 168 in all systems, 1 overshot Drained 4 gallons from each system for wort Brought to boiling 2 oz UK Northern Brewers, 1 oz UK Challanger for 90 minutes 1 oz Fuggle, 1 oz kent golding for 5 min Whirlpool and settle for 2 hrs OG = 1.010 for 9+ gallons 1st 4+ gallons: Yeast = Wyeast Old Ale Estimated corrected OG 1.094 Next 4+ gallons: Wyeast Bavarrian Lager 1.094 All returned to Dean's and started fermentation at ca. 60F 8/29 very early, ale yeast started, later lager yeast started 8/31 ale yeast slowed and lager going great, increased temp of ale yeast to 70F 9/3: Distributed 9 full single gallon jugs to club members 9/5: All 1 gallons going like gang-buster
