Just stopped in to say hi. I really like your forums. I have been reading through them recently. I am trying to get started in home brewing and this is a really good place to get recipes. I live in Orange and plan to start brewing my own in the next few months.
Thanks for the resources.

Hey Mad Mike: Our club is a great place to learn about brewing. Our club brewed more beer than any other in Texas last May on National Homebrewer's Day. We have an active club that includes competitive brewers, brewers that brew strickly for themselves and friends, and some who don't brew but like to meet monthly and share good beers. We have two members that have won first place in the National HomeBrew Competition. One of these also won expense paid trip courtesy of Sam Adams to Denver for the Great American Beer Festival last September for one of his beers. Doug (club president) and I shared the same award ($2000) and attended at little cost. I live in Orange and would love to brew with you. I have won over a douzen awards for my beers. I brew extract and all grain beers and would love to show the equipment I use (very cheap, but effective). Give me a call (883-6329) or EMail (bobcarol@bigfoot.com) if you are interested. If you are (or plan to be) a stove top brewer, I also have enough equipment to get you out of the kitchen (something that really thrilled my wife) if we brew together. I am also going to Houston the first week of Feburary and could pick up ingredients if you want to brew together, but I likely have enough ingredients and equipment for both of us to brew a good beer, but I hope you contact me earlier in case I need to pick up special extracts. I have plenty of malt grains (likely > 300 lbs after the trip to houston) and lots of hops (American and European), and enough extract for one 5 gallon batch (more after my trip to Houston).

I would love to join the club --- even if i have to watch for the next few months. I have had my fair share of great brews from all over the world, Skopsko - Macedonia EKU - Togo West Africa Cass - South Korea O.B. - South Korea Moose Head - Canada Kokono - Canada Pilsner - Togo West Africa Beamish Red - Shannon Ireland and many more--- although none of them were home brew. Been moving all over the world since i was a kid and have sampled plenty of foreign brews. I will give you a holler sunday afternoon. I plan on getting my brew kit first weekend of February. Finally figured out what DeFalco's was and looked up the google map. I will definately call you Sunday Afternoon. I could brew for personanel taste or for a competition -- doesn't mater as long as i get to do a lot of sampling.
Thanks very much for the reply. For a minute i thought i might slip through the cracks.

How do you control temperature during the fermentation process?
