Doug, Dave, Mark and me will brew a wheat beer in August at Doug's or Mark's house. My preference is a Sunday at Doug's (closer for everyone and the pool would likely only be used by Mark).
Doug and I talked about this beer on our round trip to Houston. His desire is to make 25 gallons of beer, with 5 for the club. My guess is that we can produce 10 gallons with an OG of 1.010 to 1.011. I would prefer to get 2.5 gallons of a 1.010 rather than a lower gravity. My guess is that Mark will feal the same way. Mark likes big beers and can chose his own dilution, like the other three of us can do. If we want to brew a club beer - and it is OK'd and the next meeting - I have equipment and supplies for a 5 gallon beer.
My suggestion for our beer is - since it is supposed to be a wheat beer - is that we use a minimum of 40% wheat malt (I have the malt). I also have the remaining American 2-row. Doug and I will used a Wyeast wheat yeast. I think Dave and Mark want to use a lager yeast, a good choice since the beer will be cleaner and the blueberry juice will come out (Doug & I will compensate by using more juice).
I sugest a protein mash in at 120F in my 10 gal Gott vessel of a 60 % wheat malt (with 1/2 lb of rice hulls). We can then add this, along with the barley grains to the system mash lauter tun, trying to get a 150F rest.
During this rest, we could easily start another beer (for the club) in my equipment. Let's talk about this on this site or at the meeting.
If Mark want's to make a big beer, with little or no water dilution, I will loan him a 2.5 gallon glass carboy.
