Anybody ever brew a beer with amaranth grains? I have been contemplating planting 20 or 30 amaranth plants next year. They have been know to produce a pound of grain on one stalk and they are easy to grow. It is a plant that was planted and cultivated my the Aztecs for its grains. www.purcellmountainfarms.com/Organic%20Amaranth%20Grain.htmFrom what I have read the grains have a very nutty flavor and there are some recipes out there for beer using amaranth. I remember reading that, in Peru they would ferment the seeds to make amaranth chicha (a sort of beer). They would dry the stalks and burn them to boil the wort. They would also take the red flowers and boil them down to color the chicha red. I really want to brew it with the burning leaves and color it red with the flowers. I will try to malt the grain and dry it, then crush it with my mill. I will mash it with the addition of amalyse enzymes, then boil it down with some of the flowers.
