well I did my first smoked turkey on newyears and it was awsome I have had two people come back for the recipe and I told a few people I would post it, well here it is.
BRINE 2 c salt 1/2 c brown sugar 1 c bourbon (I used Jack) 3 c apple juice 1 gal water 1 tbls pepper corns
DRY RUB 2 tbls salt 1 1/2 tbls sage 1 1/2 tbls time 1/2 tbls pepper 1/2 tbls paprika, onion powder, sugar
in a large zip lock bag or bucket with a lid place turkey in brine mixture for 24 hrs flip once. remove from brine and rub with dry rub mixture. Smoke at 225 degrees for 7-8 hrs untill internal temp is 160 degrees
went really well with any hoppy beer

no problem any time brother you no I used to say once you go fried you never go back but I gotta say that turkey is the way to go after buying all the stuff to fry a turkey it cost atleast 50 bucks but the smoked one was cheap and was juicier I think next time I may inject it with the spices you would use for a fried turkey and add some tony's to the rub
