well my first imperial any thing for that matter I have been wanting to and have been asking questions about brewing imperial and I took the new Zymurgy mag on the boat with me and wouldn't you no they had Vinnie Cilurzo writing about brewing the Pliny the elder and Pliny the younger great article answered allot of questions I had so tomorrow Saturday 24th I will be brewing my own imperial IPA recipe I call it goolosh imperial IPA because of the mis matched jumble of hops I am using actually they are the variates he says are good for IPA's though basically I am doing a basic American IPA with a butt load of hops and adding dextrose to raise the alcohol without to much extra maltiness so if any body would like to come by come on Maybe I will cook some thing

well it was a very uneventful brew except I am having a hard time hitting my O.G. last few brews I thought it was because I have been just sparging till conversion was complete but did a full 1 hour sparge this time and still low so I believe I am not getting full crush on my grain I need a decent grain mill but on a I guess a good note I used some liquid white labs Cali ale yeast that expired in like Jan 08 , oxygenated my wort, no starter, took off slow but now is bubbling away perfectly it will be a week tomorrow and ferm has not stopped but like I said it did start very slow I think it took 3-4 days to really get going P.S. I used a duel outlet fish tank air pump to oxygenate worked great

I made a starter two weeks ago with a yeast that went out a year ago. It took three days to start bubbling. But it fermented the beer within a week.

well every thing went fine transfered the other day and gave it a taste grav was good ended up with about 6 1/2-7% and it is very hoppy wont be able to recreate this one though because I used the last two years of my hops from my garden and the alpha seems allot higher than I expected this will be a good one does any body remember how much corn sugar per gallon for bottling I want to bottle some for comp

well I think I figured out corn sugar ratio for 1 gal does 34.48 grams or .15 cups sound rite
P.S. does any body have any bottle caps I just need like maybe a dozen or two I will buy them from ya

Jason: I have caps; they are oxygen scavenging caps. I can bring to next meeting. Cost is small, a few cents each. The dextrose concentration looks a little high, but is probable OK.
